Baking soda, or Sodium Bicarbonate (Sodium Bicarbonate), commonly known as "baking soda", "soda powder" and "chongcao", has a small white crystal, and its solubility in water is less than that in sodium carbonate. It is an industrial chemical that may be toxic. The solid begins to gradually decompose above 50°C to form sodium carbonate, carbon dioxide and water, and completely decomposes at 440°C. Sodium bicarbonate is an acid salt formed by neutralizing strong alkali and weak acid, and it becomes weakly alkaline when dissolved in water. This characteristic makes it a leavening agent during food production. Sodium bicarbonate will remain after its action, and using too much will make the finished product have an alkaline smell.
